This proprietary white wine blend captures the fresh, dry style of a classic Bordeaux Blanc. Comprised of 60% Semillon from the Buttonwood Vineyard and 40% Sauvignon Blanc mostly from the Nolan Vineyard, with a small portion from River Bench Vineyard. This is a wonderful mélange that traditionally pairs well with fresh oysters, scallops, sashimi, and lightly seasoned summer dishes.
This white wine blend has subtle yet beautiful aromatics of fresh cut white flowers, under ripe peach, meyer lemon zest, and key lime. On the palate the acidity and low pH gives you a sense of minerality as well. The Semillon adds complexity with beeswax, pear, honeysuckle and green papaya on the moderately long and vibrant finish.
2017 DÉRIVE White Wine
Varietal Composition: 60% Semillon, 40% Sauvignon Blanc.
Growing Season: 2017 was a classic vintage. Dry and warm days but cool nights helped retain acidity.
Brix at Harvest: The Semillon was picked at 18 brix, and the Sauvignon Blanc at 22. Chemistry: Finished Total Acidity 0.71 with a pH of 3.31, Alc. 12.5%
Fermentation / Élevage: Concrete, stainless, and neutral barrels were utilized. Fined, Gently Filtered
